Edwin Narvaez has been in the coffee industry since he was a child: his parents were coffee farmers and taught him how to grow it. In 1994 Edwin bought the La Esmeralda farm and became a producer; currently the whole family works in the company and the varieties of coffee grown are Tambo, Bourbon Rosado and Colombia. Edwin is passionate about coffee cultivation and loves to innovate processes, learn new cultivation techniques and apply them to his coffees to improve batches.
This Pink Bourbon is harvested following a rigorous maturation criterion and the cherries are then floated and selected by hand. The coffee is then exposed to a 20-hour dry fermentation with the pulp subsequently pulped and fermented for 20 hours without water, then washed and dried on raised beds until reaching an ideal humidity level.
